Stew is an ideal dish for both lunch and dinner. Any vegetables can be used for cooking, as well as any meat, spices, and tomato sauce.
Cook Anastasia shared a recipe for a vegetable stew with tomato paste, garlic, and herbs on Instagram.
Ingredients:
- zucchini - 2 pcs.
- potatoes - 2 large pieces
- carrot - 1 pc.
- eggplant - 1 pc.
- sweet pepper - 1 pc.
- red onion - 1 pc.
- asparagus beans - 150 g
- green onions - 3-4 branches
- basil - 2 sprigs
- salt
- tomato sauce - 4 tbsp
- potato seasoning - 2 tbsp.
Method of preparation:
1. Dice everything except beans and fry onions and carrots in vegetable oil for 5 minutes over medium heat. Add potatoes and 1 tbsp of seasoning and fry for 7 minutes. Add zucchini and simmer for 20 minutes, cover, then add eggplant. Pour a glass of water and tomato sauce and simmer for 10 minutes.
2. Add peppers, beans, basil, green onions, salt, and another spoonful of seasoning. Simmer for another 10-15 minutes.
