Elementary eggplant appetizer in the oven: it takes a few minutes to prepare
Eggplants are a great base for a light and satisfying appetizer. These vegetables go well with cheese and juicy tomatoes. All you need to do is combine them and simply bake them – it will be delicious.
The idea of cooking an elementary eggplant appetizer was published on the Instagram page of food blogger Anna with the nickname ann food. You will spend a maximum of 30 minutes.
Ingredients:
- eggplant - 1 pc.
- salt
- oil for greasing parchment and eggplant
Ingredients for the filling:
- tomatoes - 1 pc.
- onions - 0.5 pcs.
- hard cheese - 50 g
- dill - to taste
- eggs -1 pc
- sour cream - 1 tbsp
- mustard - 1 tsp
- salt - to taste
Method of preparation:
1. Cut the eggplant into rings.
2. Season with salt and wait for the bitterness to come out.
3. Rinse and dry.
4. Put on a parchment greased with vegetable oil.
5. Pour oil on top and put in the oven for 15 minutes at 200 degrees.
6. Mix diced tomatoes and onions, dill, grated cheese, egg, sour cream, mustard, and spices.
7. Remove the eggplant from the oven.
8. Put the filling on the eggplant and put it in the oven for another 15 minutes until tender.
