Delicious, clear, and rich broth from baked bones: how to cook correctly
Delicious broths don't have to be made from meat; bones are also ideal. Only before making broth from them, cooks advise baking them, so the dish will be very flavorful and tasty.
The cook shared a recipe for a delicious broth made from bones and fried vegetables on Instagram.
Ingredients:
- 1.5 kg of veal bones
- tomato paste
- 5 liters of water
- 1-2 onions
- 1-2 carrots
- 3-4 stalks of celery
- 3-4 cloves of garlic
- 3-4 bay leaves
- 5-6 peas of allspice
- salt
Method of preparation:
1. Brush the bones with tomato paste on all sides and bake at 180-200C for 30 minutes.
2. Do not peel the onions and carrots. Cut in half and fry in a dry frying pan.
3. Put the bones, vegetables, and remaining ingredients in a saucepan and cover with cold water.
4. Cook for 3.5-4 hours over very low heat without a lid. Periodically skim off the foam and fat from the surface. Add salt to taste 15 minutes before the end.
