Baked pumpkin with meat stew in sweet and sour sauce: hearty and delicious
Pumpkin is a very valuable, tasty, and healthy vegetable that can be the basis for making delicious cereals, soups, and salads. It can also be deliciously stewed with meat and cheese.
The cook shared a recipe on Instagram for a delicious baked pumpkin with meat, carrots, mushrooms, and cheese.
Ingredients:
- 2 Hokaido pumpkins, or 1 large one
- 400 g of neck
- 100 g of sweet and sour sauce
- 1 onion
- 1 medium carrot
- 1-2 cloves of garlic
- 1/2 bell pepper
- 100 g of mushrooms
- 1-2 potatoes
- 150 ml of tomato juice
- 50 g of hard cheese or mozzarella
- salt, pepper, bay leaf to taste
Method of preparation:
1. Chop the vegetables, chop the beef as well, pound the meat to soften it, and cut it into small pieces.
2. Fry the meat first, then gradually add the vegetables, tomato juice, sweet and sour sauce, and potatoes and simmer for 30-40 minutes. Add salt at the end.
3. Cut off the lids of the pumpkin, remove the center, brush with oil inside, fill the stew, cover with lids, and bake at 200 degrees for 1 hour.
Sprinkle with cheese when serving hot stew!
