Fluffy and moist semolina cake with cottage cheese: made without flour and kefir
Semolina cake is a delicious homemade cake based on semolina. The pastry is made mainly with kefir and various fillings: apple, cherries, banana, cottage cheese, dried fruit, and even pumpkin.
Food blogger Oleksii Kriuchkov (kruchkov.food) shared a recipe for semolina cake with cottage cheese and dried apricots on his Instagram page, which turned out to be very tender and moist.
Ingredients:
- sugar - 100 g
- eggs - 3 pcs.
- apricots - 100 g
- semolina - 200 gr
- baking powder - 5 g
- sour cream - 100 g
- 5-9% cottage cheese - 350g
Method of preparation:
1. Mix eggs with sugar, mix with a whisk until smooth.
2. Add a pinch of salt, sour cream and cottage cheese. Beat with a blender until smooth.
3. Chop the dried apricots and add them to the mixture along with the baking powder and semolina. Stir and leave for 30 minutes.
4. Put the finished mass in a mold covered with parchment. Bake at 180 degrees for 45 minutes.
