The favorite dish at Pancake week every year is undoubtedly pancakes with cottage cheese. Especially if the cottage cheese is homemade - it is quite fatty and juicy. It's also delicious if you add raisins.

Ingredients for pancakes:

  • eggs - 2 pcs.
  • sugar - 1 tbsp
  • oil - 1/2 tbsp
  • corn starch - 2 tbsp
  • milk - 200 ml

Ingredients for the filling

  • cottage cheese - 250 g
  • egg - 1 pc
  • sugar - 50 g
  • vanilla extract - 2-3 drops
  • raisins - 50 g

How to make pancakes:

1. Add sugar to the eggs. Beat with a mixer.

2. Add the oil. Mix well.

3. Add starch, beat with a mixer and gradually add milk.

4. Fry the pancakes on both sides until cooked.

5. For the filling, add the egg, sugar, vanilla extract (or vanilla sugar) to the cottage cheese and mix (or whip with a blender if the cottage cheese is dry and lumpy).

6. Add raisins (pre-washed and dried). Stir.

7. Put the filling on the pancake, wrap it up, put it in a mold, add a little butter, cover with foil or a lid.

8. Put in the oven at 160 degrees for 30 minutes.
