Traditional potato pancakes can be made into lordy ones. The dish will be much more satisfying if you put a delicious filling of mushrooms and meat on the potato base. This is how potato pancakes are prepared in different regions of Ukraine. The idea of making hearty lordy potato pancakes was published on the Instagram page of food blogger Alex Mil (mil_alexx). Sour cream and cheese will add juiciness.

Ingredients for the filling:

  • 70 g onions
  • 200 g of mushrooms
  • 200 g of meat or minced meat (any is fine)
  • 2 tbsp of sour cream
  • salt, pepper, dried garlic + 12 g of oil
  • 30-40 g of hard cheese

Ingredients for potato pancakes:

  • 500 g of potatoes
  • 70 g of onions
  • 1 tbsp of flour
  • egg
  • salt, pepper, turmeric
  • 30-40 g of oil for frying

Method of preparation:

1. For the filling, fry the meat or minced meat in vegetable oil for a few minutes.

2. Add the onion and stir-fry for 4 minutes.

3. Add mushrooms and fry for another 6-7 minutes.

4. Pour in sour cream, add salt, pepper, and dried garlic.

5. Stir fry for 4-5 minutes and cook.

6. Grate the potatoes on the finest grater.

7. To prevent the potatoes from turning black, alternate between rubbing the potatoes and onions.

8. Add the flour, egg, salt and pepper, turmeric (for a beautiful yellow color), and crushed garlic and mix.

9. Do not drain the liquid from the potatoes, so the pancakes will be more fluffy.

10. Pour in the oil and spoon the pancakes, one large one, over the entire surface of the bottom.

11. Fry over medium heat until golden brown and then turn over.

12. When ready, put the meat filling and a little cheese in the center of the pancake.

13. Fold the pancake in half and fry on both sides for one minute to melt the cheese.

14. Dry on a napkin from the oil and serve with mushroom gravy (machka) while hot.
