French omelette "Poulard" for breakfast: recipe for a popular egg dish

Omelette "Poulard" is a traditional French dish. It is prepared without milk, butter and flour. It turns out very puffy and airy. It can be served with different vegetables, greens and cheese.

Chef Vadym Bzezynskyi (pava_vb) on his Instagram page shared the recipe for an omelette "Poullard" with shrimp and vegetables, which you can make in just 10 minutes.

Ingredients:

  • eggs - 3 pcs.
  • shrimps - 3 units
  • arugula
  • avocado - 1/2 pc
  • chilli pepper
  • tomatoes - 1 pc
  • butter/olive oil
  • salt, pepper

Method of preparation:

1. First peel shrimp from shells and stomachs.

2. Next, separate the egg whites from the yolks. Add salt and pepper to the yolks, mix until smooth. Add a pinch of salt to the whites and beat with a mixer until stiff peaks form.

Heat the butter in a frying pan. Pour a thin layer of yolks, put whites evenly on top. Cook for a few minutes under a lid, then transfer the omelette to a plate.

Meanwhile, peel the avocado from the skin, sprinkle with lemon juice and cut into cubes, also cut tomatoes and peppers.

5. When the omelette is ready, place the shrimp in the pan and fry them until golden.

6. When serving, cut the omelet in half and cover one part with the other. Place arugula, shrimp and vegetables on top. Bon appetit!
