Delicious eggplant rolls in a new way: a recipe for a delicious appetizer
Eggplant rolls are a delicious and refined appetizer that will surprise all the guests at the festive table. The dish is based on a tender and juicy filling, spices or dressing, and herbs.
Food blogger Tetiana Dudka (stilynavkus) shared a recipe for stuffed eggplant with feta, garlic and herbs on her Instagram page.
Ingredients:
- eggplants - 2-3 pcs.
- olive oil
- salt
Filling:
- onion - 2 pcs.
- feta - 500 g
- parsley
- vegetable oil - 1 tbsp
- pepper
The dressing:
- garlic - 2-3 cloves
- olive oil - 60 g
- liquid honey/maple syrup/dark molasses - 1 tbsp.
Method of preparation:
1. First, peel and cut the eggplants into thin slices, 4 mm thick. Put them on a baking sheet covered with parchment, drizzle with olive oil and sprinkle with salt. Bake at 180 degrees for 10 minutes.
2. To prepare the filling, cut the onion into half rings and fry until golden brown.
3. Chop the parsley and feta, add to the onion. Season with pepper.
4. At this stage, lay the baked eggplant slices on top of each other (3 slices are needed for one roll), spread the filling and wrap first in a roll, then in the form of a so-called snail. Repeat with the rest of the ingredients.
5. Put the finished rolls in a baking dish, squeeze the garlic on top and pour a mixture of honey and oil. Bake at 200 degrees for 40-50 minutes. Enjoy!
