No worse than the store-bought one: the secrets of a real Kyiv cake are revealed. The recipe

The Kyiv cake is a hallmark not only of the capital but of the whole of Ukraine. Its appearance on the table signified the arrival of a holiday and the fact that the whole family finally got together. This dessert used to be prepared by few people because it was considered extremely difficult to make.

However, times have changed now and no special skills are required to make Kyiv cake. On Instagram, chef Volodymyr Yaroslavsky revealed all the secrets that will make this dessert extremely tasty and disappear from the table in no time.

Ingredients for cakes

  • Proteins - 8 pcs
  • Sugar - 100 gr
  • Flour - 60 gr
  • Corn starch - 10 g
  • Sugar - 170 gr
  • Vanilla sugar - 10 g
  • Roasted hazelnuts - 200 g

Ingredients for Charlotte cream

  • Egg yolks - 8 pcs
  • Milk - 200 ml
  • Sugar - 260 gr
  • Butter 82.5% - 350 g

Ingredients for chocolate cream

  • Cocoa powder - 20 g
  • Cognac - 20 ml
  • Nuts for decoration - 120 g

Method of preparation

1. Whip the whites with a pinch of salt and a few drops of lemon juice into a foam, add 100 grams of sugar and beat until it dissolves.

2. Chop the roasted nuts and mix with the rest of the dry ingredients.

3. Gently mix the whipped egg whites with the dry ingredients and nuts.

4. Divide the mixture into 2 parts.

5. Put into a 20 cm diameter baking dish greased with oil and lined with parchment.

6. Bake at 125-130°C for 2-2.5 hours. Take out and cool.

7. Mix the yolks with milk and sugar. Bring to a boil, stirring vigorously with a whisk. Cool the mixture.

8. Beat the butter until it turns white, add the custard mixture in 3 steps.

9. Divide the resulting cream into 3 parts. Add cocoa and cognac to one third and beat a little more.

10. Spread 75% of the white cream on the first cake, put the second cake on top and grease the edges with the remaining white cream.

11. Add the chocolate cream to the top layer. Sprinkle the edges with nut crumbs.
