The idea of making Christmas stollen was published on the Instagram page of food blogger Emilia Yevtushenko (emiliya.yevtushenko). This recipe is perfect for those who want to delight their loved ones with their own culinary masterpiece. Prepare the stollen in advance and it will become a real decoration of your Christmas table.
Ingredients:
- room temperature butter - 180 g
- sugar - 140 g
- a pinch of salt
- room temperature eggs - 2 pcs
- cottage cheese - 180 g
- flour - 430 g
- baking powder - 10 g
- cinnamon - 3 g
- dried ginger - 2 g
- nuts - 100 g
- candied fruit - 300 g
Method of preparation:
1. Rinse the dried fruit well and add the juice of three oranges and 100 g of cognac or rum.
2. You can also add zest of one orange. The main thing is to fill the candied fruit with liquid to the top (if it is not enough, you can add cold boiled water). Leave for at least one night or even longer.
3. For the dough, beat butter with sugar for 4-5 minutes and add one egg at a time, kneading each time until smooth.
4. Next, grind the cottage cheese through a sieve or beat with a blender and add to the dough.
5. Sift flour and baking powder and add half of it to the dough.
6. Mix well and add the next half. Knead with your hands.
7. Strain the candied fruit. Divide the dough into 4 parts - you will get 4 medium stollen or 2 large ones.
8. The first option is to roll out the stollen and wrap it. You can also take a cupcake mold, sprinkle with flour and put the dough in it. Then turn the pan over onto parchment - all the stollen will be the same shape and very beautiful.
9. Bake in a preheated oven and brush with butter on all sides while still hot. Sprinkle with powdered sugar.
9. Wrap in parchment and eat on Christmas Day. The longer the stollen stands, the tastier it is.
