How to cook the perfect borscht: the secrets that will make the dish unsurpassed
Every Ukrainian housewife has her own recipe for borsch. Most likely, it was handed down from your mother or grandmother and is considered the most delicious of all the dishes your family members have ever tasted.
And it is indeed so. But the details make the difference between ordinary things and exquisite ones. In cooking, the details determine the taste. Food blogger Daria Ivanova talked about them on Instagram. She revealed some secrets that will significantly enrich the taste of every borscht.
Meat
Fried meat always tastes better. And this is not just a simple law of nature, it's the Maillard reaction, a chemical process that enhances the flavor of the product. Pre-roasting will take your broth, roast, or other dish to the next level.
Take the meat out of the fridge and keep it at room temperature for 30 minutes. After that, fry the pieces over high heat for the next 3-5 minutes. Only then do we proceed to making the broth.
Vegetables
It is also better to pre-fry the vegetables used in borscht. This can be done separately, or simply put them in the pan with the meat.
First, add the onion to the meat. Mix everything well and fry for 3 minutes. Next, add grated carrots and beets, and after 3 minutes, tomato paste.
Tomato paste
This ingredient is a must when cooking borscht. In order for the tomato paste to fully reveal its flavor, it needs to be heated well for 3-4 minutes, and only then pour water for the future broth. This will enhance its flavor and aroma and remove unwanted acid, which gives an unpleasant aftertaste.
Beetroot
Beets contribute 90% of the flavor of borscht, so it's extremely important to choose the right ones. But in any case, beets need sugar. About 1 tablespoon of the product can completely change its taste and make the future dish even more delicious.
Water
To ensure that all the foods that have been fried before cooking get along well, you need to add the right amount of water. Be sure to use boiling water. It will make the flavors of the products combine into one, creating an unsurpassed taste of homemade borscht.
