Duck with apples for the New Year's table: how to marinate in beer so that everyone will like it
On the eve of the New Year holidays, hostesses are looking for new and interesting recipes for main dishes. They set the mood for the guests and create a real holiday atmosphere.
Chef Liza Hlinska shared a recipe for duck with apples on Instagram. She suggested cooking the bird in a beer marinade.
Ingredients
- Duck – 2-2.5 kg
- Salt
- Pepper
- Honey – 1.5 tbsp
- Borodino bread – 1 loaf
- Light beer – 2 glasses
- Apples – 4-5 pieces
- Soy sauce – 20 ml
- Butter – 20 grams
Method of preparation
1. Prepare the duck. Wash, dry, and cut off the abdominal fat. Cut the wings to the first joint. Remove the esophagus, goiter, neck, and the fatty coccygeal glands.
2. Pour boiling water over the duck for 1 minute, drain, and pluck the feathers.
3. Rub with salt and pepper and refrigerate for 10 hours.
4. Rub the duck with 1/2 of the honey and leave at room temperature for several hours.
5. Peel the skin off the apples and cut them into small pieces. Stuff the duck with the apples and sew it up.
6. Cut the bread into 1-1.5 cm thick slices. Put the apple peel and bread in the bottom of the baking dish. Pour the beer over the duck.
7. Place the duck on a "pillow" of bread. Cover with a lid and put in the oven at 190C for 1 hour 40-50 minutes.
8. Mix the butter, remaining honey and soy sauce.
9. Remove the duck from the oven and brush with the sauce. Increase the oven temperature to 200C and put the duck in the oven for another 10 minutes. Take the duck out of the oven.
