According to her, there is no need to clean and wash mushrooms. Getting them under running water can change their structure. And then, during frying, all the water will come out, resulting in the mushrooms being boiled instead of fried.
The fact is that mushrooms are somewhat similar in structure to a sponge. Thus, they absorb a large amount of moisture. And it, in turn, begins to come out of the mushrooms when they are subjected to heat treatment. The best way to cook mushrooms, says the chef, is to sauté them with chopped garlic. This is when the flavor of the product is fully revealed.
