1.Dissolve the yeast with sugar in warm milk.

2. Add the flour.

3. Leave the sourdough to activate in a warm place for 10-20 minutes.

Ingredients for the pastry:

  • 250 g sugar
  • 125 ml sour cream (20% fat content minimum)
  • 3 yolks
  • 2 eggs
  • 125g butter (melted)
  • 100 ml butter
  • 0.25 tsp turmeric
  • zest of 1 orange
  • 2 tbsp. strong alcohol

1. Add the sourdough to the pastry. Mix until homogeneous.

2. Add 650 grams of flour (sometimes a little less, sometimes a little more).

3. Leave the dough to rise in a warm place for about 2 hours.

4. Put the dried fruit in boiling water for a few seconds. Drain and dry with paper towels.

5. Add flour, mix (200 g of dried fruit, 1 tbsp of flour).

6. When the dough has fermented for 2 hours - add dried fruit to it.

7. Output: 3 forms of 13 cm in diameter, 1 form of 11 cm in diameter.

8. Under the food film leave to rise in a warm place for an hour.

9. Grease the top of the loaves as desired

10. Bake at 170 degrees, top-bottom mode without convection, about 60 minutes.
