What to cook from pumpkin for breakfast: tastier than syrnyky
Pumpkin is very satisfying and nutritious. So it's a great option to make it for breakfast. Instead of the classic syrkyny, you can make semolina cake: the dish has a very delicate texture and a pleasant appearance.
The idea of making a hearty pumpkin semolina cake is published on the Instagram page of food blogger Polina with the nickname polli_cooking. You just need to grate the vegetable for the dish.
Ingredients:
- 250 g semolina
- 250 g of kefir
- 2 eggs
- 80-100 g of sugar
- 1 tbsp of vanilla sugar
- 80 g of butter
- 1 tsp. baking powder
- 200 g of grated pumpkin
- 1 tsp of cinnamon
- pumpkin seeds
Method of preparation:
1. Mix semolina with kefir and set aside to swell for 10-15 minutes.
2. Beat eggs with sugar and vanilla sugar until the mass is white in a separate bowl.
3. Add melted butter and semolina.
4. Add baking powder and mix well with a spatula.
5. Peel and grate pumpkin and add it to the batter.
6. Add cinnamon and mix well.
7. Pour batter into a baking dish, level the surface and sprinkle with pumpkin seeds.
8. Put it in the oven preheated to 180 degrees for 35-45 minutes. Check for doneness with a toothpick.
