It's quite difficult to make syrnyky that hold their shape and are not stiff. However, it's all about the binding ingredients you use. You should replace ordinary wheat flour and add eggs in the right way.
The idea of making healthy banana syrnyky was published on the Instagram page of food blogger Kateryna Brailo (ketiv_). You don't need to add the whole eggs, just the yolk.

Ingredients:
- cottage cheese - 200 g
- egg yolk 1 pc
- banana - 1/2 small
- semolina - 1 tbsp
- rice flour - 1 tbsp
- raisins - 1 tbsp
Method of preparation:

1. Rub cottage cheese through a sieve.
2. Add yolk, semolina, rice flour, and pre-soaked raisins (pour boiling water for an hour and rinse well).
3. Mash banana with a fork and add to the other ingredients.

4. Mix everything. The dough should be tender, not clogged (do not add too much flour).
5. Sprinkle the work surface with flour and form roughly equal-sized balls.

6. Roll them in flour, form syrnyky with a glass, and trim with a knife.
7. Grease a frying pan with coconut oil (ghee oil can aso be used), heat it up and fry syrnyky.

8. Fry over low heat until golden brown on each side. Then cover with a lid.
9. Turn over carefully when one side is browned.
