Spectacular vanilla and blueberry cheesecake: prepared without baking

No-bake desserts are a real lifesaver when you need to quickly prepare a sweet table for tea. It's a great idea to make a spectacular cheesecake. It has a delicate curd base and berry mousse.
The idea of making vanilla blueberry cheesecake was published on the Instagram page of food blogger Yulia Vilich (julia_vilich_food_blog).

Ingredients for the cookie base:
- 260 g shortbread cookies (melted milk type)
- 140 g melted butter

1. Crush the biscuits into crumbs, add the butter, and knead thoroughly.
2. Put the mixture into the prepared mold, spread it on the bottom, and tamp it down with a glass.
3. Put in the refrigerator for 40 minutes.
Ingredients for the curd base:
- 600 g of cream cheese (Philadelphia)
- 70 g of powdered sugar
- 13 g of gelatin soaked in 60 ml of water
- 120 ml of cream (15-20%)
- 80 g of white chocolate
- 1 sachet of vanilla sugar

1. Add vanilla sugar to the cream, heat, remove from heat and add chocolate.
2. Mix thoroughly.
3. Add the gelatin and mix again until the gelatin dissolves.
4. Cool the mass to room temperature.
5. Add cream with chocolate and powdered sugar to the cottage cheese. Blend until smooth.
6. Spread half of the curd mass on the cheesecake base (about 450 g).
7. Put in the refrigerator until it hardens. Keep the container with the second part of the curd mass in warm water.

Ingredients for blueberry mass:
- 400 g of cream cheese
- 150 g of powdered sugar
- 10 g of gelatin soaked in 50 ml of water
- 160 g of frozen blueberries
Method of preparation:
1. Blend the blueberries to a puree, heat, but do not boil.
2. Add gelatin, and knead until gelatin dissolves.
3. Let it cool down. Combine cottage cheese, powder, and mashed potatoes, and blend until smooth.
4. Pour the mixture over the frozen vanilla layer.
5. Put in the refrigerator until it hardens.
6. Pour the remaining curd mass on top (if it is slightly frozen, reheat it in a water bath).

7. Put berries on top (optional).
8. Put back in the fridge until firm.
9. The next step is to prepare regular kiwi jelly according to the recipe on the package (take 350 ml of water per sachet).
10. Pour the cooled jelly over the dessert.
11. Put it back in the fridge. It is better to cover the inside of the mold with acetate wrap. This way, the sides of the dessert will be perfect when you remove the mold.
