Legendary Lviv cheesecake: a recipe from a famous chef
Even people who have never visited Lviv have heard of Lviv syrnyk. It is a unique and legendary dessert that tastes good with both a cup of strong coffee and a latte made with alternative milk.
There are many different recipes for Lviv syrnyk, and they are all unique in their own way. But famous chef Volodymyr Yaroslavskyi recently posted a recipe on his Instagram that was sent to him by a subscriber, and he, in turn, adapted it to his own taste.
Ingredients for cheesecake
- cottage cheese 9% - 900 gr
- sour cream - 40 gr
- sugar - 150 gr
- vanilla sugar - 10 g
- eggs - 4 large or 5 normal-sized eggs
- butter 82.5% - 100 g
- semolina - 40 gr
- corn starch - 20 g
- raisins - 125 g
- lemon zest
Ingredients for the glaze
- dark chocolate - 80 gr
- milk chocolate - 80 gr
- butter 82.5% - 70 g
Method of preparation
1. Mix cottage cheese with sugar and eggs and beat with a blender until smooth.
2. Add starch, semolina and butter and blend again.
3. Pour boiling water over the raisins for 1 minute, then drain and let the excess moisture evaporate.
4. Add the raisins and grated lemon zest to the curd mass.
5. Cover a rectangular baking dish with parchment and pour the curd mixture into it. Bake at 180 degrees for 45-50 minutes.
6. Remove the cheesecake from the oven and let it cool completely.
7. Melt the two types of chocolate in a water bath with the butter.
8. Cover the cheesecake with the glaze and refrigerate until it is completely hardened.
