The kutabs are shaped like chebureks. But the dough is not crispy, but very soft and tender. Therefore, the filling is perfectly suitable for melting cheese and lots of greens. The dish is cooked in a pan for only a few minutes.

Ingredients:
- flour - 380 g
- boiling water - 220 ml
- salt - 1 tsp.
- oil - 2 tablespoons
- Butter for kutabs - 30 gr
Ingredients for the stuffing:
- mixed greens - 100 g (dill and parsley)
- cheese (can be sour milk or mozzarella) - 250 gr

1. Add salt, oil, and boiling water to the sifted flour.
2. Knead the dough first with a spoon, then with your hands on a work surface for about 10 minutes.

3. Wrap the dough in cling film or a bag for 30 minutes.
4. In this time we make the filling: finely chop the greens, grate the cheese. Mix everything.

5. Divide the dough into 8-10 equal pieces.
6. Form each piece into a ball and cover it with clingfilm.
7. Roll out the ball very thinly into a circle, and put the filling on one half, not reaching the edges.

8. Cover with the other half of the dough and pinch the edges. At the same time, you need to press a little on the corner, so that the air comes out (otherwise it will puff up during frying).
9. Put the frying pan on medium heat, heat it up, and put the kutab (you can fry two at a time if the diameter allows).

10. Fry the kutabs for a few minutes on both sides. If there are pieces of unbaked dough, fry for a few more minutes on both sides.

11. Transfer the kutabs to a plate and brush them with butter while they are warm.
