"Honey Cake" is one of the most popular cakes made in Ukraine for every celebration. The secret to the perfect taste of the dessert is to make thin cakes from the dough. Then they will be quickly saturated with cream, and the cake will have a very good taste.

The idea of making a delicious "Honey Cake" with thin sponges was published on the Instagram page of food blogger Halyna with the nickname reeixit. Sour cream cream is perfect for this dough.

Ingredients for 1 serving of 8-10 cakes:

  • 3 eggs
  • 80 g of honey
  • 80 g of sugar
  • 1 tsp. of baking soda
  • 50 g of butter
  • 4-4,5 cups of flour

Ingredients for the cream:

  • 900 g sour cream 22% or higher
  • 1 cup of sugar
  • a sachet of vanilla

How to make the cream:

1. Be sure to put the sour cream in a colander with cheesecloth overnight. This way the excess liquid drains off and the cream will be thick.

2. Combine all the ingredients.

3. Whisk until smooth.

You can sprinkle nuts between the cakes, or put chopped prunes, and cherries in their juice).

Method of making the dough:

1. Put the sugar, honey, butter and baking soda in a water bath and heat, stirring until the sugar is completely dissolved. The mass will turn white and increase in volume.

2. Then add 1 egg to this warm mass, no need to cool, whisking. Pour in the flour.

3. Knead the plastic dough.

4. Roll out between the parchment while still warm or on the countertop.

5. Bake at 160 degrees for about 8-10 minutes. When it is browned, take it out.

6. Grease the cooled cakes with cream and put a cutting board on top of the last cake and something heavy (maybe a jar of water) on the board so that the cakes settle evenly and soak.

7. Leave it under the load overnight. The top can be sprinkled with powder.
