Hearty potato pancakes with cheese: even yesterday's mashed potatoes will do

Potatoes are a versatile ingredient that can be a hearty side dish on their own or a base for many dishes. And even if you have cold mashed potatoes left over after dinner, you can still use them. Namely, to make basic potato pancakes.

The idea of making potato pancakes with cheese was published on the Instagram page of food blogger Valentyna Sayenko (valya__saenko).

Ingredients:

  • potatoes - 3 pcs.
  • eggs - 1 pc.
  • cheese - 100 g + for rolling
  • greens - 2-3 stems
  • garlic - 2 cloves
  • salt, pepper

Method of preparation:

1. Flour for breading

2. Cook the potatoes until tender. Cool them down. Peel and mash them like mashed potatoes.

3. Add the egg, chopped herbs, spices and garlic.

4. Next, add the grated hard cheese.

5. Mix thoroughly. Form the pancakes with wet hands and roll them in the cheese, as if pressing it a little.

6. The cheese will add a ruddy crust. Then roll in flour, roll on all sides.

7. Fry in a preheated skillet for about 3 minutes on each side over medium heat.
