Fluffy Easter cake with milk and butter: use compressed yeast
Easter cake will definitely be fluffy if you make it with yeast dough. Also, be sure to use butter and milk for the base - the dough will be elastic and soft. Raisins will add a special flavor.

Ingredients:
- milk – 0.5
- yeast – 50 g
- flour – 1 kg
- butter – 200 g
- eggs – 7 pcs.
- sugar – 350 g
- vanilla sugar – 2 tbsp
- favorite dried fruits – 200 g
Method of preparation:
1. Pour warm water over the dried fruit to soften it. If raisins, cover with hot water for about 10 minutes or with aromatic alcohol (optionally overnight).
2. Pour the warm milk into a bowl, add the yeast, vanilla sugar, and 5 tbsp of flour and mix.
3. Cover with cling film and put in a warm place until the dough rises 2 times.
4. Meanwhile, break 5 eggs and add 2 yolks.
5. Beat with a mixer and add sugar.
6. Beat again until the mixture is lightened. Melt the butter in the microwave and add to the eggs.
7. Sift half the flour and stir in the yeast that has already risen.
8. Sprinkle the remaining flour on top and mix.
9. The dough will be sticky and a little liquid – it's necessary. Knead it for 10 minutes by hand or in a food processor for 5 minutes.
10. Cover the bowl with foil and put it in a warm place for an hour.
11. Squeeze and dry the steamed dried fruits, mix them into the dough, and put them into the molds.
12. Put the molds with the dough in the heat for another 30 minutes to rise. Meanwhile, preheat the oven to 180-190 degrees.
13. Set the cakes to bake for 20-30 minutes. Depends on the size of the mold.
14. Check the dough for readyness with a skewer.
15. Decorate when cooled.
