You've never cooked herring like this before: marinated in blackcurrant and wine vinegar

Surprise your guests on New Year's Eve and make this herring in currants. For cooking, you will need frozen berries, which you most likely prepared in the summer. The fish will have a new interesting and rich flavor.

The idea of cooking marinated herring in black currant was published on the Instagram page of food blogger Olena Kudriavtseva (maslom_wgoru). Wine vinegar will add a special piquancy.

Ingredients:

  • 300 g salted herring
  • 150 g of frozen black currants
  • 1 red onion
  • 50 g of sugar
  • a few red peppercorns
  • 50 ml of wine vinegar
  • 100 ml of water (can be replaced with blackcurrant juice if you have natural juice with a minimum of sugar)
  • 1 bay leaf

Method of preparation:

1. Cut the onion into thin rings.

2. Cut the herring into small pieces.

3. Defrost the black currants and beat them in a blender. Do not blend too hard - it should just release the juice.

4. Put everything except the herring and onion in a small saucepan and put on the fire. Let it boil for 5-10 minutes, cool.

5. Put the herring and onions in layers in a jar or other container and pour the cold marinade over them. Put in the refrigerator for 2-3 days. The longer the herring stays in the sauce, the more tender and purple it will become.
