Why add starch to potatoes before frying

It's quite difficult to fry perfect crispy potatoes at home as the pieces fall apart and become very soft. However, one simple ingredient - starch - will help to fix everything. It should be added before frying.

The idea of making crispy potatoes was published on the Instagram page of food blogger Alex Mil (mil_alexx). The pieces just need to be dipped in starch before frying. The vegetable will not absorb excess oil and will remain very crispy.

Ingredients:

  • potatoes - 400 g
  • salt
  • starch - 30 g
  • eggs - 2 pcs
  • breadcrumbs
  • vegetable oil - 300 ml

Ingredients for the cheese sauce:

  • butter - 20 g
  • flour - 1 tsp
  • milk - 125 g
  • cheddar cheese (processed cheese) - 75 g
  • salt, paprika

Method of preparation:

1. Cut potatoes into sticks. Season with salt and mix.

2. Roll the potatoes in starch.

3. Dip in beaten egg and then in breadcrumbs.

4. When oil boils, add the potatoes and cook for about 3 minutes. Choose a tall saucepan to avoid pouring in too much oil. You can cook 7-8 times with the same oil.

5. Put the potatoes on a napkin to drain the excess oil.

6. Make the sauce. Add butter to the pan and melt it.

7. Add a little flour and mix well.

8. Add milk, stirring constantly. Add salt, paprika, and hot pepper.

9. Add cheddar cheese. Stir until you get a smooth sauce. If it is too thick, add a little more milk.
