Kharcho is a traditional Georgian soup. And if you prepare the broth for it with pork or chicken, it will be a completely different dish. After all, real kharcho is made only with beef ribs.

Ingredients:

  • meat (beef ribs) - 700 g
  • carrots + onions - for broth
  • rice - 75 g
  • onion - 1 pc
  • tomato paste - 0.5 tbsp
  • tomatoes - 300-400 g
  • Suneli hops - 1.5 tsp.
  • salt
  • garlic - 2-3 cloves
  • red hot pepper - to taste
  • parsley, cilantro, dill - 30 g
  • butter
  • oil
  • pomegranate juice or tkemali sauce

1. Melt the butter in a preheated frying pan, add a little oil and fry the meat on all sides until golden brown.

2. Transfer the meat to a saucepan, add the onion and carrots and cover with water. There should not be much water, about 5 centimeters above the level of the meat.

3. Cook the broth until the meat is tender, about one hour.

4. Meanwhile, finely chop the onion and fry until golden brown.

5. Add the tomato paste to the onion and mix well.

6. Peel the tomatoes (using boiling water), chop them finely and add to the roast.

7. Salt everything well and add the suneli hops. Simmer for a few more minutes until the tomatoes soften.

8. Take the ribs and vegetables out of the finished broth. Separate the meat from the bones and cut into portions.

9. Add the washed rice, chopped meat and roast to the broth. Stir and cook until the rice is tender.

10. At the end, add finely chopped garlic, herbs and red hot pepper (be careful with the amount of pepper) and pomegranate juice (for sourness).

11. Leave the soup to stand for 15-20 minutes.
