What is the secret of the perfect homemade Napoleon cake: we share the best technology
The perfect Napoleon cake is not always possible to make at home. The cakes crumble and don't soak up the cream properly. But all this is because of one very simple nuance.
The idea of making the perfect homemade Napoleon cake was published on the Instagram page of food blogger Victoria Tolokova (vika_tolokova23). The secret is that all the ingredients must be cold. And the dough itself before baking as well.
Ingredients for the dough (all ingredients must be very cold):
- 180 g butter
- 150 g of sour cream
- 1 egg
- 300 g of flour
Method of preparation:
1. Cut the cold butter into cubes and grind with flour. It is best to do this in a chopper, but if not, you can do it with your hands.
2. Mix the cold egg with cold sour cream and add to the butter crumbs. Gather the dough into a ball. Wrap it in cling film and refrigerate for at least 2 hours.
3. Then divide the dough into 7 parts. Roll out one part and keep the rest in the refrigerator. The dough should be cold before baking.
4. Roll out the dough, cut out a circle and put it in the refrigerator for 15 minutes. Only then can it be baked in a preheated 200-degree oven for about 7 minutes.
Ingredients for the cream:
- 340 ml of milk
- 60 g of sugar
- 1 egg
- 30 g of cornstarch
- 10 g of vanilla sugar
- 160 g of butter
- 120 g condensed milk
Method of preparation:
1. Beat the egg with sugar, vanilla sugar and starch. Pour in the milk, put on medium heat, stirring constantly, bring to a boil and thicken.
2. Then pour into a bowl, cover with cling film and leave to cool.
3. Beat the butter at room temperature into a fluffy cream, add the condensed milk.
4. When the custard base has cooled down (it should be 20°-22°), add it to the butter cream and mix everything well again.
5. Assemble the cake. Put 2 tbsp of cream on the cake (without a slide) and again the cake, cream, etc.
6. Decorate the top with crumbs and let it stand in the refrigerator for a while.
