Transcarpathian bograch: an incredible dish with four types of meat

Transcarpathian bograch is a legendary dish that is popular not only in this region but also in western Ukraine. By the way, the word "bograch" is translated from Hungarian as "cauldron". The fact is that this dish is best cooked in a cauldron over an open fire. Only then will bograch acquire a truly authentic taste.

However, it is not always possible to go outdoors, light a fire and spend several hours cooking bograch around it. Therefore, this dish is often cooked at home in an ordinary saucepan. A food blogger with the nickname mil_alexx shared a recipe for this dish on Instagram. He also added that it is the most delicious bograch he has ever tasted.

Ingredients for bograch:

  • Smoked pork brisket - 300 gr
  • Hunters sausage - 300 gr
  • Pork or veal ribs - 500 gr
  • Pork tenderloin - 500 gr
  • Large carrots - 1 pc
  • Tomatoes - 400 g (add 1 tbsp of sugar when cutting)
  • Onions - 2 pcs
  • Potatoes - 500 g
  • Sweet pepper - 250 g
  • Parsley and dill - 1 bunch
  • Tomato paste - 2 tbsp
  • Salt
  • Pepper
  • Smoked paprika - 2 tbsp
  • Nutmeg - 1 tsp
  • Chili pepper - 1 tsp.
  • Eros Pista sauce - 1 tbsp.
  • Oil - 30 ml

Ingredients for dumplings:

  • Eggs - 1 pc
  • Salt
  • Flour - 70-80 gr

The way of preparation:

1. Pour the oil into a saucepan, add the chopped brisket, and fry to make bacon.

2. Add the chopped onion and smoked paprika. Stir constantly to prevent the paprika from burning. Fry for 6-7 minutes.

3. Add the chopped ribs and tenderloin. Pour water, or even better, broth (vegetable or meat), cover, and cook over medium heat for an hour.

4. Add chopped carrots, potatoes, peppers, tomatoes with sugar, hunting sausages, salt, pepper chili, tomato paste, and Eros Pista.

5. Add water and cook for 40 minutes. If the water boils, add more.

6. Add the herbs before serving.

Method of cooking dumplings:

1. Crack an egg into a bowl and add salt.

2. Stirring constantly, gradually add flour until you get a soft dough.

3. Break off small pieces of dough. These will be the dumplings. However, it is not necessary to add them to bograch.
