Traditional Ukrainian buns for Christmas: every housewife should make them
One of the traditional dishes of Ukrainian cuisine for Christmas is pampukhy (buns). They are sweet, with poppy seed filling. They are served with a compote or tea. It will be great to give these products to your family as a gift.
The idea of making poppy seed buns for Christmas was published on the Instagram page of the famous Ukrainian chef Liza Hlinska (lizaglinskaya). The products should be fried in oil.
Ingredients for the starter:
- 100 ml of milk
- 25 g of fresh yeast
- 10 g of sugar
Ingredients for the dough:
- 100 g of eggs
- 70 g of sugar
- lemon zest
- 150 ml of milk
- 4 g of salt
- 100 g butter (82%)
- 600 g of flour
Ingredients for lemon cream:
- 50 ml lemon juice
- 50 ml of water
- lemon zest
- 125 g of sugar
- 100 g of eggs
- 100 g butter (82%)
Ingredients for the poppy seed filling:
- 70 g poppy seeds
- 70 g of sugar
- 70 g roasted walnuts
Additionally:
- vegetable oil for deep frying
- powdered sugar for dusting
Method of preparation:
1. Mix milk, sugar, and yeast for the starter.
2. Leave at room temperature for 30 minutes.
3. For the dough, mix the starter, eggs, sugar, milk, zest, salt, flour, and softened butter.
4. Knead and leave at room temperature for 2 hours.
5. Rinse poppy seeds and boil for an hour. Pat the poppy seeds dry with a paper towel.
6. Mix with sugar. Grind and add softened butter.
7. For the cream, mix lemon juice, zest, sugar, and egg. Cook, stirring, for 10-15 seconds. Strain. Add cold butter and cool.
8. Form the buns. Take the dough, cut into pieces weighing 25-40 g, put the poppy seed filling in the center, and form balls. Cover with a towel and leave for 30 minutes.
9. Fry the buns in preheated oil until cooked.
10. Roll the cold buns in powdered sugar and fill with lemon cream.
