Soup with unusual ingredients: why add eggs and milk

MY COLOMBIAN SOUP

There are many variations of this soup, and in each region of Colombia, everyone cooked it differently. Mine was with milk and the way I make it now. It is called caldo.

Arepa or your favorite bread/crackers are perfect with the soup.

Ingredients for the soup:

- Water – 1 liter

- Potatoes – 2 pieces

- Egg – 3 pieces

- Green onion

- Cilantro

- Milk – 100 gr

- Salt.

First, boil the potatoes and onions in water until soft, then add salt. Turn down the heat and pour in the milk, let it cook for a minute or two.

Next, crack 3 eggs directly into the soup and cook for another 4 minutes, or if you want hard-boiled eggs, for another minute.

Turn it off and let it stand for a couple of minutes. Serve with aromatic herbs – cilantro and onions.
