Soft and juicy liver in a frying pan: how to cook properly

Liver is a specific product that often turns out to be very hard and even bitter after cooking. All this is due to the wrong technology. The best way to make liver really tasty is to stew it.

The idea of cooking soft chicken liver in cream was published on the Instagram page of a food blogger with the nickname zhuravlina_cooking. It can be eaten simply with bread.

Ingredients:

  • chicken liver - 500-550 g
  • cream - 250 ml (from 10% fat)
  • onions - 2-3 pcs.
  • large carrot - 1 pc.
  • salt - 1 tsp.
  • khmeli-suneli - 1 tsp.
  • coriander - 1 tsp.
  • black pepper - 1/2 tsp.
  • oil - for frying

Method of preparation:

1. Add oil to a hot frying pan.

2. Cut the onions and a carrot into half rings and put them in the pan.

3. Fry until golden brown.

4. Wash the liver well, remove all the excess fat and cut into small pieces to fry the liver well and add to the roast.

5. Stir and fry under a closed lid until almost tender over low heat, stirring occasionally.

6. Add salt, coriander, pepper and khmeli-suneli, stir and pour over the cream.

7. Cream can be of any fat content.

8. Simmer for another 5 minutes until the cream evaporates, stirring constantly.
