Simple no-bake pancake roll with bananas: easier than any cake
For a tasty and impressive dessert, you don't always need to knead and bake the dough for a long time. You can just fry pancakes. It will be delicious if you wrap banana filling with cottage cheese in them.
The idea of making a sweet pancake roll was published on the Instagram page of food blogger Tati Chudnova (chudnova.food). The dessert holds its shape perfectly and is very attractive when cut.
Ingredients:
- egg - 2 pcs.
- milk - 300 ml
- rice flour - 50 g
- corn starch - 50 g
- cocoa - 20 g
- sweetener - to taste ⠀
- a pinch of salt
- olive or vegetable oil - 10 ml
Ingredients for the cream:
- cream cheese - 400 g
- condensed milk - to taste
- banana - 1 pc
How to make pancakes:
1. Mix all the ingredients with a mixer so that there are no lumps. The batter will be liquid: this is normal.
2. Before the first pancake, grease the frying pan with a drop of oil.
3. Fry over medium heat for 30 seconds on each side.
4. Let it cool down.
Method of preparation of the cream:
1. Combine cream cheese and condensed milk.
2. Spread the cream on the pancake and, slightly stepping back from the edge of the first pancake, put a new one and then the cream again. Repeat until you run out of pancakes and cream.
3. Add the finely chopped banana.
4. Roll everything and wrap it in cling film.
5. Put in the refrigerator for a few hours.
