Lazy Medovik in 30 minutes: cakes are cooked in the oven for only 7 minutes

One of the most delicious homemade cakes is Medovik, which is made with honey cakes and delicate custard. If you like your desserts sour, add citrus zest.

Cook Polina shared a recipe for a lazy Medovik on Instagram, with cakes that take only 6-7 minutes to make.

  • honey - 80 g
  • sugar - 100 g
  • baking soda - 1 tsp
  • salt - a pinch
  • butter - 100 g
  • flour - 200 g

For the cream:

  • milk - 400 ml
  • butter - 50 g
  • eggs - 1 pc.
  • corn starch - 3 tbsp
  • sugar - 100 g

Method of preparation:

1. Custard: heat the milk, mix the egg, sugar and starch in a bowl and pour this mixture into the milk. Stir until smooth and pour the remaining mixture into the milk, put on medium heat and bring the cream to a thickening point while stirring constantly. Remove from the heat and add the butter, stir.

2. Heat the honey over low heat, add the baking soda, stirring constantly, cook over low heat for 1-2 minutes until caramel color. Remove from heat and add the butter, stir until the butter is completely dissolved. Add a pinch of salt to the eggs and beat with a mixer for 5 minutes, add sugar and beat for another 1-2 minutes. Add the cooled honey mixture to the eggs in a thin line, add the sifted flour and mix with a spatula until smooth. Divide the finished dough into 2 parts, pour it onto the parchment and spread it in a thin layer.

3. Bake in a preheated 160 degree oven for 6-7 minutes.

4. Then trim the edges of the cakes (they are needed for the sprinkle) and divide the cakes into 2, 3 or 4 parts, the more cakes, the taller the cake will be. Grind the cut pieces into crumbs.

5. Assemble the cake, spread the cakes with cream and sprinkle with crumbs. Put in the refrigerator for a few hours.
