How to make moti cakes: incredible taste of Asia in just a few minutes
Moti cake is a traditional Japanese delicacy that no tea ceremony is complete without. Delicate, light, fluffy cakes, the taste of which cannot be described in words. Those people who have already tried mochi boldly declare that it is now one of their favorite desserts.
Having tasted mochi, it may seem that the recipe for its preparation is very complicated and time-consuming. But in fact, it's not so, and you can make moti in any kitchen without any problems. The recipe for making moti at home was shared on Instagram by food blogger Yulia Vilich.
Ingredients for the dough:
- Glutinous rice flour – 110 gr
- Powdered sugar – 20 gr
- Corn starch – 5 g
- Water – 150 ml
- Odorless vegetable oil – 15 g
Ingredients for the cream:
- Cream cheese – 200 g
- White chocolate – 130 g
Ingredients for the filling:
- Currant puree – 100 g
- Sugar – 20 g
- Gelatin – 3 g (soak in 15 ml of water)
Method of preparation
1. Combine the rice flour, powdered sugar, starch, and water in a bowl. Stir until smooth.
2. Add vegetable oil and coloring to taste.
3. Pour the batter into the pan and brew it constantly stirring.
4. Wrap the finished dough in cling film and let it cool at room temperature.
5. While the dough is cooling, make the filling. Melt the chocolate in a water bath or in the microwave, add the cream cheese, and whisk until a creamy consistency is obtained.
6. It's time for the currant filling. Boil the puree with sugar until it boils. Add gelatin.
7. Pour the filling into molds, or pour into one large mold and send it to the refrigerator.
8. When the filling is frozen, cut it into portions of the desired size.
9. Divide the dough into equal parts and make a disk out of each of them.
10. Put the cream in the center of the disk, put the currant filling on top, and another layer of cream.
11. Put together opposite pieces of dough. Form into balls and refrigerate for one hour.
