Hearty Tuscan soup for lunch: what to prepare a nutritious dish from
The peculiarity of this soup is that it is cooked in meat broth, but there is no need to add the pieces of meat themselves. Due to the fact that a lot of different vegetables, legumes, and cheese are added to the dish, it turns out to be very satisfying. Therefore, this soup is ideal for lunch.
The idea of cooking a hearty Tuscan soup for lunch was published on the Instagram page of food blogger Natalia with the nickname talli_sun. It is very important to add all the listed spices, because they will add a special flavor.
Ingredients:
- red onion - 1 pc.
- carrot - 1 pc
- celery - 2 sprigs
- leek - 1 pc
- garlic - 2 cloves
- canned beans - 1 can
- canned tomatoes in their own juice - 1 can
- broth - 1-1.5 liters
- basil, oregano
- salt, pepper
- sugar - 0.5 tbsp
- butter - for frying
- herbs (parsley)
- croutons
- hard cheese
Method of preparation:
1. Cut the onion into small cubes, carrots into strips or half rings, celery into strips, leeks into rings, and chop the garlic.
2. Fry the vegetables in butter until soft.
3. Add garlic, tomatoes, beans, basil, oregano.
4. Pour in the hot broth and cook for 10 minutes over low heat.
5. Add salt, pepper, herbs and cook for another 5 minutes.
6. Before serving, add crackers and sprinkle with grated cheese
