Fluffy and tender raisin cupcake: made with kefir
Even novice confectioners can make this cupcake. The reason is that it contains no yeast, only kefir. It is fluffy and fragrant and does not require long kneading.
The idea of making a fluffy kefir raisin cake was published on the Instagram page of food blogger Nataliia talli_sun.
Ingredients:
- eggs - 2 pcs.
- sugar - 150 g
- butter (melted) - 100 g
- kefir - 150 g
- baking powder - 1 tsp
- vanilla sugar
- a pinch of salt
- flour - 250 g
- raisins - 200 g
- corn starch - 1.5 tbsp
Method of preparation:
1. Beat eggs, a pinch of salt and sugar.
2. Add butter (beat), kefir, and vanilla sugar (continue beating).
3. Sift the flour with the baking powder, and mix with a mixer at low speed until smooth.
4. Pour boiling water over the raisins, let stand for a few minutes, put them on a paper towel, and dry. Sprinkle with starch and add to the dough. Mix well.
5. Put the dough into a mold (you can use a silicone mold or another one covered with parchment).
6. Bake the cupcake for 35-40 minutes at 180 degrees.
7. Let cool slightly, remove from the mold and sprinkle with powdered sugar if desired.
