Condensed milk like in the store: what to do if it curdles

There is probably no better dessert than condensed milk. It's so delicious that you can eat it with pancakes, pancakes, ice cream, and even without anything. You can also make this delicious treat at home with just three ingredients.

Food blogger Yulia (cooking_by_y) shared a recipe for homemade condensed milk on her Instagram page and answered the most common questions about cooking it.

Recipe for homemade condensed milk

Ingredients:⠀⠀

  • milk - 300 ml (>2.5%) ⠀⠀
  • sugar - 170 g
  • butter - 20 g ⠀⠀
  • vanilla/vanilla sugar

Method of preparation:

1. Mix all the ingredients in a saucepan. Put on medium heat and cook for 20 minutes, stirring constantly (the countdown starts as soon as the butter dissolves). At the end, the mass will begin to thicken.

2. Transfer to a clean bowl. Let it cool down. Store in the refrigerator.

1. Cook for no more than 20 minutes.

2. Do not stop stirring during the entire cooking process. ⠀⠀

3. Do not reduce the heat.

Why add so much sugar? To make the condensed milk thicken well.

What happens if you "overcook" condensed milk? It will be a thick, sweet mass, similar to the Soviet candy "Korivka" (Cow) from childhood.

What to do if foam appears? Keep stirring. If bubbles appear, stir even more intensively so that the milk settles. ⠀

Dessert with condensed milk

Will 1% milk be suitable? Milk should be at least 2.5%, and preferably 3.2% or higher. The lower the fat content, the less pronounced the flavor and thickness. If you use low-fat milk, you will need to increase the amount of sugar.

What kind of cookware is suitable for cooking? An aluminum or cast-iron pan with the thickest bottom is best suitable.
