Ingredients
- Chicken thighs - 600 g
- Sweet pepper - 2 pcs.
- Eggplant - 1 pc.
- Onions - 2 pcs.
- Garlic - 4 cloves.
- Spinach - a handful
- Tomatoes - 1 can
- Salt
- Pepper
- Sugar - 1 tsp.
- Paprika - 1 tsp.
- Green onions - for serving
Method of preparation.
1. Cut the vegetables. Fry the eggplant until tender in olive oil, remove from heat and set aside.
2. Season the thighs with salt and pepper and add your favorite spices. Fry in a frying pan until golden brown. Set aside.
3. Fry the onion and garlic in the same skillet. Add the bell peppers.
4. Add tomatoes, sugar, and paprika. Stew.
5. Add eggplant and spinach.
6. Add the chicken to the pan and drown it in the sauce. Cover and simmer until tender.
7. Sprinkle with greens before serving.
