Harcho soup in a new way for a hearty lunch in 15 minutes: recipe from Hector Jimenez-Bravo
Kharcho soup is a national Georgian soup with meat and rice, walnuts, cilantro, and tkemali sauce. The soup is very thick in texture and spicy in flavor, with herbs and tomato paste.
Chef Hector Jimenez-Bravo shared a recipe for a delicious harcho soup with chicken, garlic, tkemali, and walnuts on Instagram.
Ingredients:
- Chicken thigh - 200 g
- Rice - 2 tbsp. l
- Cumin - 3 g
- Paprika - 3 g
- Salt, pepper - to taste
- Garlic - 3 pcs.
- Olive oil - 5 ml
- Onion - 20 g
- Garlic - 5 pcs.
- Tomatoes - 150 g
- Chili - 10 g
- Water - 100 ml
- Tomato paste - 20 g
- Tkemali - 100 g
- Walnuts - 20 g
Method of preparation:
1. Cut the meat, salt, add spices, mix and fry in a saucepan, add chopped garlic, onion, chopped tomatoes and chopped chili, mix and simmer.
2. Pour in the water, add the rice, stir, season with salt and pepper and add the tomato paste, tkemali sauce, and stir.
3. Add the chopped nuts, stir and serve.
You can add cilantro when serving!
