A cupcake that always turns out soft and fluffy: cooked with kefir

A flavorful and moist cupcake is the most delicious homemade pastry for tea. The most important thing is to make the right dough: milk, kefir, or sour cream. If desired, the cupcake can be topped with raisins, candied fruit, or even chocolate.

One of the cooking blogs (grenache_rose) published a recipe for a kefir cupcake on Instagram.

Kefir raisin muffin recipe


  • eggs – 3 pcs.
  • sugar – 200 g
  • kefir – 250 g
  • oil – 160 g
  • flour – 325 g
  • baking powder – 15 g
  • raisins – 60 g
  • lemon or orange zest

Method of preparation:

1. Pour the raisins with hot water for 10 minutes, then drain, dry with paper towels, and roll in flour.

2. Beat the egg whites with a pinch of salt until fluffy white foam, then add the yolks and sugar while continuing to beat.

3. Pour the oil and kefir into the resulting mass. Mix well.

4. Add flour, baking powder and grated zest. Mix well.

5. Add the raisins at the end. Stir and pour the batter into a greased mold.

6. Bake at 180 °C for 50 minutes.
