Liver cake is a delicious and nutritious dish that will decorate any holiday table. Thanks to proper processing of the liver and a delicate filling of vegetables, mushrooms, and melted cheese, the cake is juicy and not at all bitter. Liver pancakes are perfectly combined with flavorful filling, creating a multi-layered texture and rich flavor.

Ingredients for pancakes:
- chicken liver - 1 kg
- eggs - 5 pcs.
- milk - 500 g
- flour - 12 tbsp
- salt
- pepper
- vegetable oil - 30 g
Ingredients for the filling:
- champignons - 500 g
- onion - 3 pcs.
- carrots - 4 pcs.
- processed cheese - 6 pcs.
- mayonnaise - 300 g
- salt
- pepper
Ingredients for the decor:
- boiled eggs
- green onions
How to make pancakes:
1. Wash the liver well and clean it from the films.
2. Combine liver, eggs, milk, flour, salt, pepper in a bowl
3. Blend with an immersion blender until smooth (without lumps of liver and flour).
4. At the end, pour in the oil and mix well again.
5. Fry the pancakes - about 30 pieces are obtained.
6. For the filling, fry the mushrooms, onions, and finely grated carrots in a small amount of oil until tender.
7. Finally, season with salt and pepper and cool to room temperature.
8. Then add mayonnaise and grated processed cheeses on a fine grater, mix.
9. Form the cake, alternating pancakes and filling.
10. Grease the last pancake with mayonnaise, sprinkle with grated egg, sprinkle the sides with chopped onions.
