How to prepare Smerekova Hata cherry cake for a family tea party
The Smerekova Hata cake is a taste of childhood. Our moms used to prepare this incredibly beautiful dessert in the evening and we couldn't wait until the morning to taste it.
Chef Volodymyr Yaroslavskyi knows exactly how to make this dish. On Instagram, he shared all the details of this recipe, which will make Smerekova Hata even tastier than it was in childhood.
Ingredients for the filling
- pitted cherries - 900 g
- sugar - 70 g
- corn starch - 50 g
Ingredients for the dough
- 20% sour cream - 200 g
- 82.5% butter - 200 g
- sugar - 70 g
- flour - 400 g
- baking powder - 8 g
Ingredients for the cream
- 20% sour cream - 550 g
- sugar - 180-200 g
- 35% cream - 350 ml
- chocolate - 70 g
Method of preparation
1. Add sugar and starch to the thawed cherries, bring to a boil and cook until the mixture thickens, stirring constantly. Then put it in a cold place to cool.
2. Mix soft butter with sour cream and sugar, whisk, add flour and baking powder, quickly knead the dough and chill for an hour.
3. Divide the dough into 5 parts of about 170 g each. Roll each part on parchment (about 28 by 23 cm), adding a little flour.
4. Put about 60 g of the filling on each strip, roll into tubes, pinch the ends well, and place on a parchment-lined baking sheet with the edge down.
5. Bake at 210 degrees for 15-16 minutes.
6. Add sugar to sour cream and mix (do not whisk). The sugar will melt in 10 minutes. Whip the cream into a froth and add it to the sour cream in 3 stages. The cream will be quite thick. If desired, add a few drops of lemon juice.
7. Put a little cream on the bottom of the mold. Put thinner tubes on the bottom, greasing each layer with cream. Then use the rest to form a kind of a pyramid.
8. Leave in the fridge overnight. In the morning, sprinkle with grated chocolate.
