Instead, the starch-rich milk becomes "liquid gold," which adds silkiness and creaminess to the mashed potatoes, while replacing the need for heavy cream.

For even more convenience, Rosemary recommends mashing the potatoes directly in the pot, which reduces the amount of dishes to wash.
