What to replace meat in borsch: a dish you can eat in Lent

Traditional Ukrainian borsch is a dish in a rich broth with a lot of meat. But now it is Easter fasting. Therefore, some people refuse to eat such a meal. In addition, some people can not eat borsch at all, because of its fat content. In this case, the meat in this dish can be replaced.

Ingredients:

  • water - 2.5 liters
  • beans - 300 grams (dry)
  • beets - 3 pcs.
  • potatoes - 3 - 4 pcs.
  • carrots - 2 pcs.
  • onions - 2 pcs.
  • garlic - 1 head
  • smoked pear - 4-5 pcs.
  • bay leaves - 2-4 pcs.
  • salt -
  • sugar - pinch
  • pepper
  • oil (olive)
  • paprika

1. Pre-cook the beans until they are 80-90% cooked. Change the water in it several times after boiling.

2. In cold water add a whole onion, a head of garlic, a bay leaf and beets. Place on the fire.

3. Dice the potatoes, half-circle the carrots, and grate the other carrots. Shred the onion.

4. Fry onion in olive oil until golden, then add grated carrots, salt and pepper.

5. Take the cooked beets out of the water to mature, salt the water and add the carrots to it.

6. Add the smoked pear, having previously washed it in boiling water.

7. In time, add potatoes and "almost cooked" beans to the water, add the onions and carrots.

8. Grate the beets on a coarse grater, fry in olive oil, add salt, sugar and pepper, and at the end - tomato paste and stew well. Add to the water.

9. Taste for salt (add as needed) and cook until all the vegetables are cooked.

10. Allow to infuse for 1-2 hours.
