How to Make a Tasty and Successful Easter cake: A Recipe from Lilia Zvit

In Ukraine, the bright holiday of Easter is just around the corner, namely on April 16. The main symbol of the holiday is a fragrant and delicious pastry - Easter, which symbolizes the invisible presence of Jesus in Christianity. The cylindrical church bread baked on Easter Eve is called Artos ("leavened bread"). Baking homemade Passover is a continuation of this church tradition.

Culinarian Lilia Zwit shared a recipe on her YouTube channel for a delicious and, most importantly, successful Easter cake, the dough for which is made with milk.

Ingredients for the sourdough:

  • milk - 500 ml
  • fresh yeast - 100 g or 30 g of dry yeast
  • flour - 8 tbsp.
  • sugar - 3 tbsp.

Ingredients for the dough:

  • chicken yolks - 10 pcs.
  • sour cream - 100 g
  • lard - 50 g
  • 82% butter - 150 g
  • unrefined sunflower oil - 50 ml
  • salt - 1/2 tsp.
  • sugar - 300 g
  • vanilla sugar - 16 g
  • sifted flour - 1450 g
  • turmeric - 1/2 tsp.
  • zest of 1 lemon
  • vodka - 1 tbsp.
  • dried fruit - 400 gr

Method of preparation:

1. Sourdough: pour room temperature milk into a large bowl, add sugar and yeast, mix well and add 8 tbsp of flour, mix again. Be sure to cover the bowl with cling film and leave for 30 minutes.

2. In a separate bowl combine the soft butter, melted lard, sour cream, yolks, sugar, vanilla sugar and salt, beat the mixture well with a mixer until the sugar dissolves.

3. Pour the cooked egg mixture into the sourdough and pour in the flour in three passes, kneading constantly.

4. Transfer the dough to a greased surface and knead, add the lemon zest, vodka and dried fruit with 2 spoonfuls of flour, it will absorb all the moisture. Knead the dough, transfer to a bowl and leave to rise in a warm place for 1 hour.

5. Then rim the dough some more and spread it out into molds, filling them 1/3 full. You can decorate the top as desired and leave to rise again.

 

6. Then bake in a preheated oven for 30-40 minutes at 160 C.
