Instead of the usual salads and borscht, you can make a very original and tasty appetizer from beets. The vegetable will remain healthy because it needs to be baked in the oven. Feta sauce will be a great addition.

The idea of preparing a delicious red beet appetizer was published on the Instagram page of nutritionist Khrystyna Nedostup (nedostup.nutritionist). The dish contains only healthy ingredients.

Ingredients:

  • 3-4 small or 2 large red beets
  • 200 g of feta
  • 1-2 tablespoons of yogurt
  • thyme
  • orange or lemon
  • walnuts
  • salt, pepper
  • olive oil

Method of preparation:

1. Peel the red beets, and cut them into cubes.

2. Spread on a baking sheet, add a little olive oil and salt/pepper.

3. Bake at 200 degrees for about 20 minutes, let cool.

4. Mix feta, yogurt, thyme, a little orange juice, salt and pepper in a blender.

5. Add enough yogurt to get the desired consistency. Spread the sauce on a plate and add the baked red beets.

6. Sprinkle with chopped nuts, a little chili and dill.

7. Serve with a baguette or bread.
