In spring and summer, it's best to eat more fresh vegetables and herbs because they are the most useful during this period. And it's best to dress such dishes with sour cream or vegetable oil rather than mayonnaise.

A chef shared a recipe for a delicious fresh vegetable salad with soy sauce and olive oil dressing on Instagram.
Recipe
Ingredients:
- cucumber - 1 pc.
- bell pepper - 1/2 pc.
- tomato - 2 pcs.
- carrot - 1/2 pc.
- green onions (parsley, dill, basil can be added to taste)
- hot pepper - 1/2 pc.
Dressing:
- garlic - 1 clove
- olive oil - 2 tbsp.
- soy sauce - 1.5 tbsp.
- ground black pepper
- lemon juice - 1 tsp.
- sugar - 1/2 tsp.
Method of preparation:
1. Cut vegetables into approximately equal sizes.

2. Mash carrots with your hands and a pinch of salt.

3. Mix all the ingredients for the dressing.

4. Add the dressing to the vegetables and stir. Let it soak for 10 minutes.
