Stuffed eggs are a very popular holiday appetizer that is easy to prepare. Usually, the halves are filled with cheese, meat, and fish fillings, which are seasoned with mayonnaise. But there is a much healthier and more nutritious option.

The idea of making stuffed eggs with a healthy filling without mayonnaise was published on the Instagram page of food blogger Kateryna Movchan (katarina_movchan). The ingredients are very simple.

Ingredients:

  • 4 eggs
  • 1 avocado
  • 1 tsp. lemon juice
  • herbs (dill and parsley)
  • 0.5 tsp of ground paprika
  • salt to taste

Method of preparation:

1. Cook the eggs for 7 minutes after the water boils. The yolk needs to be fully cooked.

2. Peel the boiled eggs and cut them in half.

3. For the avocado paste, mix the egg yolks, dill and parsley, avocado (peeled and pitted), lemon juice, salt and paprika in a bowl.

4. Beat the mixture well with an immersion blender until smooth.

5. Stuff the whites of the eggs with the paste: squeeze out a portion of the paste with a pastry bag or carefully fill with a spoon.
