Spectacular blue cheesecake with blueberries: no need to bake
Cheesecake is one of the most versatile desserts. You can do without dough and baking. Cookies are perfect for the base, and the curd mass freezes perfectly in the refrigerator. You can experiment with colors and fillings. It is very effective with blue jelly and blueberries.
The idea of making blue cheesecake with blueberries was published on the Instagram page of food blogger Yana Stanishevska.
Ingredients:
- cottage cheese - 1 kg
- 5 and 3 tbsp of powdered sugar
- 3 sachets of jelly (blueberry or blackberry flavor)
- 1 tbsp of instant gelatin
- biscuit cookies
- blueberries
Method of preparation:
1. Divide the cottage cheese into 2 parts and beat with a blender until smooth.
2. Add 5 tbsp of powdered sugar to the first part of the cottage cheese and beat with a mixer. Add gelatin (dissolved in 50 ml of boiling water) in a thin stream.
3. Put the biscuits in the mold, top with the first layer of curd mass, and refrigerate for 15 minutes. It should be set.
4. Make the second curd layer. Whip the cottage cheese, 3 tbsp of powdered sugar, and add 1 pack of diluted jelly (1 pack is diluted in 150 ml of boiling water). Pour the white layer on top. Put it in the fridge for 15 minutes.
5. Dilute 2 packs of jelly (500 ml of boiling water for 2 packs) and let cool slightly.
6. Put the blueberries on the middle layer and pour the jelly as thin as a film (in thickness). The berries should set – then pour the rest of the jelly.
7. Put in the cold until completely frozen (preferably overnight).
