Puffy buns with nut filling for tea: a recipe for the perfect dough
Flavorful homemade buns are the perfect tea time pastry. They can be a great alternative to pies, cakes, and dumplings. The key to perfect buns is a fluffy yeast dough, which is best made with milk.

Ingredients:
- milk - 160 g
- flour - 350 g
- sugar - 3 tbsp
- salt - 0.5 tsp
- fresh yeast - 20 g
- vanilla sugar - 1 package
- butter - 80 g
- eggs - 1 pc.
Filling:
- nuts - 250 g
- eggs - 2 pcs.
- sugar - 1 tbsp
- milk - 50 ml
Method of preparation:
1. For the starter, add yeast, 1 tbsp of sugar and a little flour to warm milk. Mix and leave for 10 minutes until it forms a "cap".
2. Then add sugar, salt, vanilla sugar, egg and sifted flour and knead the dough. Next, add the pieces of butter at room temperature, cover the dough with a towel and leave it for 1 hour to rise.
3. For the filling, fry the nuts, grind in a blender until smooth, add sugar and egg and mix.
4. Knead the dough with your hands and roll it into a rectangle no more than 3-4 mm thick. Spread the nut filling on the dough and smooth it out. Fold over 1 edge of the dough by 1/3, and then cover with the other edge of the dough. Cut the folded dough into 8-10 strips, twist them, roll each bun into a snail-like form, and leave the finished buns under a towel for another 40 minutes.
5. Brush the finished buns with milk and bake in an oven preheated to 170 °C for about 35-45 minutes.
